Adapted from Simply Recipes

Yield: 4 apples

  • 4 small good baking apples, such as Fuji, Rome Beauty, Golden Delicious, or Jonagold
  • 2 tablespoons brown sugar OR white sugar+dollop molasses
  • 1/2 teaspoon cinnamon
  • 2 tablespoons dried cranberries OR currants OR raisins
  • 2 tablespoons chopped walnuts OR pecans (optional)
  • 1/2 tablespoon butter
  • 3/4 cup boiling water
  • Vanilla ice cream for serving
  1. Preheat oven to 375°F. Set aside an 8″ x 8″ baking pan.
  2. Wash and dry the apples.
  3. Using a sharp paring knife, cut out the cores, leaving the bottom 1/2 inch of the apples intact. Be careful not to stab yourself with the knife. Put apples in the baking dish.
  4. In a small bowl, stir together brown sugar, cinnamon, cranberries OR currants OR raisins, and chopped nuts (if using).
  5. Stuff each apple with brown sugar mixture. Top with a dot of butter.
  6. Pour boiling water into the bottom of baking dish. Bake 30-45 minutes, until the apples are cooked through and tender but not mushy. You can poke them with a toothpick to check that it slides in easily.
  7. Serve warm with a few scoops of ice cream.
